About every other week, I’ll make some version of crockpot chicken.  We eat a couple of meals off of it and freeze whatever meat is left to use for throwing in salads for work or making chicken sandwiches. 

Crockpot Chicken

1 whole chicken

salt to taste

pepper to taste

crushed garlic cloves

1 lemon cut in half

honey

Season the chicken inside and out.  Put several garlic cloves and the halved lemon inside the chicken.  Place chicken in the crockpot.  Drizzle with honey and throw some more garlic cloves on top.  Cook on low about 4-5 hours.

I don’t always…okay, I never stick with just the spices and ingredients listed above.  I usually also throw in some rosemary sprigs and maybe some thyme or oregano or sage or whever else my hand lands on when I reach for my herbs and spices.  The last time I did a crockpot chicken, I did a rub of salt, pepper, parsley,and rosemary after smearing the chicken with olive oil.  You can do pretty much whatever you think will taste good.  Honestly, I’ve never had this recipe go wrong no matter what seasonings I ended up using. 

As an added bonus, you can use the carcass to make homemade chicken stock or soup if you are so inclined.  How can you go wrong!  This definitely works for me.
